Blantyre Lemon Curd

1970 recipe for Lemon curdMy gran Mary Duncan (nee Danskin) used to collect recipes. In fact, she was a brilliant baker (as many ladies were in her generation) learning skills from her own mother. As a child of the 70s, i can remember home baking on almost every occasion and it seemed that gran was just never out of the kitchen, something she didn’t mind at all.

Our kitchen drawers were stuffed full of recipes. Tablet, banana loaf, sultana cake, christmas cake, scones, it was quite the norm for a tupperware tin or two to always be stocked in the cupboard, in case some visitors came round. Gran continued baking all through her life until dementia took over during the 1980s. She enjoyed a long life into her 80s.

This receipe is from her little “Blantyre book of receipes”. Tips and techniques refined to perfection. The recipe is for Lemon Curd, which we loved on toast! It’s printed here in her own handwriting dating from 1970 or so.
